Air Fryer Sweet Potatoes (Ready in 40 Minutes!)

A beautiful plate of a homemade, elegant, and crispy Air Fryer Sweet Potato, being served with a grilled chicken breast and a green salad for a healthy dinner.

A simple and quick recipe for making perfectly cooked whole sweet potatoes in an air fryer. The sweet potatoes are scrubbed, coated in olive oil, salt, and pepper, and then cooked in a hot air fryer until the skin is crispy and the inside is tender and fluffy. The finished potatoes are served classic-style with a pat of butter and a sprinkle of fresh chives.

Ingredients

  • Two 8-ounce sweet potatoes, scrubbed
  • 2 teaspoons olive oil
  • Kosher salt and freshly ground black pepper
  • Unsalted butter, for serving
  • Chopped fresh chives, for serving

Instructions

  1. In a medium bowl, toss the sweet potatoes with the olive oil, 1/2 teaspoon of salt, and a few grinds of pepper until they are evenly coated.
  2. Place the potatoes in the basket of a 6-quart air fryer.
  3. Cook at 400°F for 35 to 40 minutes, flipping the potatoes halfway through the cooking time. The potatoes are done when the skin is crispy and the inside is tender when pierced with a fork.
  4. Carefully cut a slit lengthwise along the top of each hot potato. Fluff the inside with a fork and season with another pinch of salt.
  5. Top with a pat of butter and a sprinkle of chopped fresh chives before serving.
