- 125 g uncooked tapioca pearls
- 30 g (about 2.5 tbsp) brown sugar
- 1 large avocado
- 400 g (about 1 ¾ cups) milk
- 30 g (about 1.5 tbsp) condensed milk
- 200 g (about 1 ½ cups) ice
Instructions
- Cook the Tapioca Pearls: Bring 6 cups of water to a boil in a medium pot. Once boiling, pour in the tapioca pearls and stir immediately to prevent them from clumping.
- Boil the pearls uncovered for 15 minutes, stirring occasionally.
- Remove the pot from the heat, cover it, and let the pearls sit for another 15 minutes until they are translucent.
- Drain the cooked tapioca pearls and transfer them to a small bowl. While they are still warm, add the brown sugar and stir until the sugar dissolves into a syrup. Add a spoonful of water if the syrup is too dry. Set aside.
- Make the Avocado Smoothie: In a blender, add the flesh of the avocado, the milk, condensed milk, and ice.
- Blend until the mixture is completely smooth and creamy.
- Assemble the Drink: In a tall glass, spoon in about half of the prepared tapioca pearls and brown sugar syrup.
- Fill the rest of the glass with the avocado smoothie.
- Stir well before enjoying with a large boba straw. Repeat for the second glass.
