A rich and creamy smoothie-style boba drink. This recipe features a thick and smooth beverage made by blending fresh avocado with milk, sweetened condensed milk, and ice. This is served over a base of freshly cooked, chewy tapioca pearls that have been coated in a simple brown sugar syrup. The result is a satisfying and decadent drink, similar to what you would find in a specialty bubble tea shop.

  • 125 g uncooked tapioca pearls
  • 30 g (about 2.5 tbsp) brown sugar
  • 1 large avocado
  • 400 g (about 1 ¾ cups) milk
  • 30 g (about 1.5 tbsp) condensed milk
  • 200 g (about 1 ½ cups) ice

Instructions

  1. Cook the Tapioca Pearls: Bring 6 cups of water to a boil in a medium pot. Once boiling, pour in the tapioca pearls and stir immediately to prevent them from clumping.
  2. Boil the pearls uncovered for 15 minutes, stirring occasionally.
  3. Remove the pot from the heat, cover it, and let the pearls sit for another 15 minutes until they are translucent.
  4. Drain the cooked tapioca pearls and transfer them to a small bowl. While they are still warm, add the brown sugar and stir until the sugar dissolves into a syrup. Add a spoonful of water if the syrup is too dry. Set aside.
  5. Make the Avocado Smoothie: In a blender, add the flesh of the avocado, the milk, condensed milk, and ice.
  6. Blend until the mixture is completely smooth and creamy.
  7. Assemble the Drink: In a tall glass, spoon in about half of the prepared tapioca pearls and brown sugar syrup.
  8. Fill the rest of the glass with the avocado smoothie.
  9. Stir well before enjoying with a large boba straw. Repeat for the second glass.
