A beautiful bowl of homemade, healthy Cauliflower Fried Rice being enjoyed with chopsticks for a vibrant and healthy lunch.

A healthy, low-carb, and vegetarian version of fried rice that uses riced cauliflower as a substitute for traditional rice. This one-pan stir-fry is packed with flavor from shiitake mushrooms, carrots, fresh ginger, garlic, and spicy kimchi. Scrambled eggs and edamame are tossed in for protein. The dish is seasoned with a simple sauce of tamari, rice vinegar, and toasted sesame oil, and finished with a bright splash of fresh lime juice.

Ingredients

  • For the Sauce:
  • 2 tablespoons rice vinegar
  • 2 tablespoons tamari
  • 2 teaspoons toasted sesame oil

Instructions

  1. In a small bowl, mix together the rice vinegar, tamari, and sesame oil to create the sauce. Set aside.

  6. Add the prepared tamari sauce and the edamame to the skillet. Cook until the edamame is heated through.
  7. Turn off the heat and stir in the fresh lime juice. Season to taste with more salt if needed.
  8. Serve garnished with sesame seeds, microgreens, a fried egg, and a drizzle of Sriracha, if desired.
