  • 3 dozen large fresh strawberries
  • 11 ounces cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 1/4 teaspoon almond extract
  • Grated chocolate, optional

Instructions

1. Prepare the Strawberries:

  • Wash and dry the strawberries thoroughly.
  • Remove the stems from the strawberries using a paring knife.
  • Cut a deep “X” in the tip of each berry, being careful not to cut all the way through.
  • Gently spread the berries open to create a cavity for the filling.

2. Make the Cheesecake Filling:

  • In a small bowl, beat the softened cream cheese, confectioners’ sugar, and almond extract until light and fluffy.

3. Fill the Strawberries:

  • Transfer the cheesecake filling to a piping bag fitted with a star tip (or a resealable plastic bag with a corner snipped off).
  • Pipe or spoon about 2 teaspoons of the filling into each strawberry.

4. Garnish (Optional):

  • If desired, sprinkle the filled strawberries with grated chocolate.

5. Chill:

  • Chill the stuffed strawberries until serving. This allows the filling to set slightly and the flavors to meld.
