  • 1 tablespoon butter, for the baking dish
  • 4 pounds russet potatoes, peeled and cut into 1-inch pieces
  • 1 cup whole milk
  • 1/2 cup (1 stick) butter, melted
  • 1 1/2 cups grated mozzarella cheese
  • 1 cup freshly grated Parmesan cheese, divided
  • Salt and freshly ground black pepper
  • 2 tablespoons plain dry bread crumbs

Instructions

  1. Preheat the oven to 400°F. Coat a 13 by 9-inch baking dish with 1 tablespoon of butter.
  2. Place the potatoes in a large pot of boiling salted water and cook for about 15 minutes, until they are very tender.
  3. Drain the potatoes well, return them to the hot pot, and mash them thoroughly.
  4. Mix in the milk and the melted butter.
  5. Stir in the mozzarella cheese and 3/4 cup of the Parmesan cheese.
  6. Season to taste with salt and pepper.
  7. Transfer the mashed potatoes to the prepared baking dish and spread evenly.
  8. In a small bowl, combine the bread crumbs and the remaining 1/4 cup of Parmesan cheese.
  9. Sprinkle the bread crumb mixture evenly over the mashed potatoes.
  10. Bake, uncovered, for about 20 minutes, until the topping is golden brown and the casserole is heated through.
