Ingredients

  • 1 pound lean ground beef (90% lean)
  • 1 cup finely chopped sweet onion
  • 1/2 cup finely chopped green pepper
  • 1 jalapeno pepper, seeded and finely chopped (optional)
  • 1/2 cup chili sauce
  • 1/2 cup water
  • 1 to 2 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon packed brown sugar
  • 1 teaspoon yellow mustard
  • 6 kaiser rolls or hamburger buns, split
  • 2 tablespoons butter, softened
  • Pickle slices (optional)

Instructions

  1. Preheat the broiler.
  2. In a large skillet, cook the ground beef, onion, green pepper, and optional jalapeno over medium heat for 5-7 minutes, breaking up the beef into crumbles, until the beef is no longer pink. Drain off any excess grease.
  3. Stir in the chili sauce, water, chopped chipotle peppers, brown sugar, and mustard. Bring the mixture to a boil.
  4. Reduce the heat and let it simmer, uncovered, for 8-10 minutes, stirring occasionally, until the sauce has slightly thickened.
  5. While the sauce simmers, lightly spread the softened butter on the cut sides of the rolls. Arrange them on a baking sheet, buttered-side up.
  6. Broil the rolls 3-4 inches from the heat for about 30 seconds, until lightly toasted.
  7. Serve the beef mixture on the toasted rolls, with pickle slices if desired.
