Ingredients

  • 1 pound plus 1 cup egg noodles, divided

  • 3/4 teaspoon nutmeg

Instructions

  1. First, prepare the crispy topping. Melt 2 tablespoons of butter in a nonstick skillet over medium-high heat. Crush 1 cup of the egg noodles and add them to the skillet.   4. To the pot with the hot noodles, add the remaining 4 tablespoons of butter, the crème fraîche, chopped chives, poppy seeds, and nutmeg.
  5. Add 1/2 cup of the reserved cooking water and stir until a creamy sauce forms and coats the noodles, adding more cooking water as needed to reach your desired consistency.
  6. Season the pasta with salt to taste.
  7. Serve immediately, topped with the prepared fried noodles for a crunchy finish.
