Ingredients

Filling & Wraps:

  • â–¢ 4 large flour tortillas (approx. 8-10 inch size)
  • â–¢ 4 breakfast sausage links
  • â–¢ 4 large eggs
  • â–¢ 1 cup shredded cheese (cheddar or your favorite melting cheese)
  • â–¢ (Optional: 1 tsp butter or oil for skillet, if needed)
  • â–¢ (Optional: Salt and pepper for eggs, to taste)

Garnish (Optional):

  • â–¢ Salsa, hot sauce, or ketchup for serving

Instructions

1. Cook Breakfast Sausage:

  • Place a medium or large skillet over medium heat.
  • Add the breakfast sausage links to the skillet. Cook, turning occasionally, until they are nicely browned on all sides and fully cooked through according to package directions or your preference (typically 10-12 minutes).
  • Once cooked, remove the sausage links from the skillet and set them aside on a plate. If there’s excessive grease in the skillet, carefully drain most of it off, leaving just a thin coating (or wipe out and add a touch of fresh butter/oil for eggs).

2. Scramble the Eggs:

  • In the same skillet over medium-low to medium heat, scramble the 4 large eggs. (Crack eggs into a small bowl first, whisk with a pinch of salt and pepper if desired).
  • Cook, stirring gently with a spatula, until the eggs are cooked to your desired consistency – soft and slightly moist, or more firm.
  • Remove the scrambled eggs from the skillet and set aside with the sausage.

3. Assemble the Roll-Ups:

  • Lay one large flour tortilla flat on a clean work surface.
  • Place one cooked breakfast sausage link towards one side of the center of the tortilla.
  • Spoon about one-quarter of the scrambled eggs alongside or around the sausage.
  • Sprinkle about ¼ cup of the shredded cheese evenly over the sausage and eggs.
  • To roll: Fold in the short sides of the tortilla slightly (if making a burrito-style roll and your tortillas are large enough), then tightly roll up the tortilla from one of the longer sides to encase the filling. If using smaller tortillas or preferring a simpler roll, just roll it up snugly.

4. Toast the Roll-Ups:

  • Return the same skillet to medium heat. (No extra fat is usually needed if your skillet is non-stick, but a tiny wipe of butter can enhance browning).
  • Carefully place the assembled roll-ups, seam-side down, into the warm skillet. You may need to do this in batches depending on the size of your skillet.
  • Cook for 2-3 minutes per side, or until the tortilla is lightly golden brown and slightly crispy, and the cheese inside is nicely melted and gooey. Flip carefully with a spatula to toast all sides.

5. Serve:
