1. Prepare Slow Cooker and Cook Chicken Base:
- Lightly grease the insert of your 3-quart slow cooker with cooking spray.
- Place the boneless, skinless chicken breasts into the prepared slow cooker.
- Sprinkle the minced garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper evenly over the chicken breasts.
- Scatter the cubes of cream cheese on top of and around the chicken pieces.
- Cover the slow cooker securely with its lid. Cook on the LOW setting for 2 1/2 to 3 hours. The chicken is done when it is cooked through, very tender, and an instant-read thermometer inserted into the thickest part of a breast registers 165°F (74°C).
2. Shred Chicken and Combine Filling:
- Once the chicken is cooked and tender, carefully remove the chicken breasts from the slow cooker using tongs or forks. Place them on a clean cutting board or a large plate. Leave the accumulated flavorful juices and melted cream cheese mixture in the slow cooker insert.
- Using two forks, shred the cooked chicken into bite-sized pieces.
- Return the shredded chicken to the slow cooker with the creamy juices.
3. Stir in Swiss Cheese and Ham; Melt Cheese:
- Add the 2 cups of shredded Swiss cheese and the 1 1/4 cups of finely chopped fully cooked ham to the slow cooker with the shredded chicken and creamy sauce.
- Stir everything together gently but thoroughly until the shredded chicken, ham, and Swiss cheese are well combined with the creamy base.
- Cover the slow cooker again. Let the mixture stand on the WARM setting (or keep it on LOW if your slow cooker doesn’t automatically switch to WARM after cooking cycle ends) for about 15 minutes. This allows the Swiss cheese to completely melt into the mixture and all the flavors to meld beautifully, creating a hot and gooey filling.
- Stir the mixture once more before serving to ensure everything is evenly distributed.
4. Assemble the Sliders:
- While the cheese melts into the filling, if your Hawaiian sweet rolls are not already split, slice them in half horizontally. Warm them slightly if desired (e.g., briefly in a low oven or microwave).
- Spoon a generous amount of the warm, cheesy Chicken Cordon Bleu mixture onto the bottom half of each Hawaiian sweet roll.
5. Garnish and Serve:
- Sprinkle the assembled sliders with freshly chopped green onions for garnish.
- Place the top half of the roll over the filling.
- Serve the Chicken Cordon Bleu Sliders immediately while they are warm and the filling is wonderfully melty. Enjoy this comforting and delicious treat!
