‘Eyeball’ Punch (The Perfect Halloween Punch!)

A festive and spooky ‘Berry Eyeball Punch,’ perfect for a Halloween party. This easy, no-cook punch features a deep, dark purple base made from a pureed mixture of fresh blackberries, açaí juice, and blueberry juice. The signature ‘eyeball’ garnish is creatively made by stuffing a blueberry into the cavity of a canned lychee. Just before serving, the chilled fruit juice base is combined with lemon-lime soda for fizziness and optional spiced rum or gin for an adult version.

Ingredients

  • 3 cups blackberries
  • 18 canned lychees (from one 20-ounce can), plus 3/4 cup syrup from the can
  • 1/4 cup fresh lemon juice
  • 2 cups sweetened acai juice
  • 1 cup blueberry juice cocktail
  • 18 large blueberries
  • 3 cups lemon-lime soda
  • 1 cup spiced rum or gin (optional)

Instructions

  1. In a blender, puree the blackberries, the 3/4 cup of reserved lychee syrup, and the lemon juice until smooth.
  2. Strain the puree through a fine-mesh sieve into a pitcher, pressing on the solids to extract all the liquid. Discard the seeds.
  3. Add the açaí juice and the blueberry juice to the pitcher. Refrigerate the punch base for at least 2 hours, until chilled.
  4. To make the ‘eyeball’ garnish, gently push one large blueberry into the cavity of each of the 18 lychees.
  5. Just before serving, transfer the chilled punch to a punch bowl. Add the stuffed lychee ‘eyeballs.’
  6. Gently stir in the lemon-lime soda and the rum or gin, if using.
  7. Serve the punch over ice.
