Ingredients

Main Salad:

  • â–¢ 3 cups watermelon, cubed (seedless preferred)
  • â–¢ 2 ripe peaches, pitted and sliced
  • â–¢ 1/4 cup fresh mint leaves, chopped
  • â–¢ 1 tablespoon fresh lime juice
  • â–¢ 1/4 teaspoon sea salt (or to taste)

Optional Add-ins:

  • â–¢ 1/4 cup crumbled feta cheese
  • â–¢ 1/4 cup thinly sliced red onion
  • â–¢ 1/2 cucumber, sliced

Instructions

1. Prepare the Fruit:

  • Wash, peel (if desired for peaches, though skin is fine), and cut your fruit. Cube the watermelon into bite-sized pieces. Pit and slice the ripe peaches.
  • Place the cubed watermelon and sliced peaches into a large serving bowl.

2. Add Mint:

  • Finely chop the fresh mint leaves.
  • Add the chopped mint to the bowl with the watermelon and peaches. Gently toss to mix the fruit and mint.

3. Dress the Salad:

  • Drizzle the fresh lime juice evenly over the fruit salad.
  • Sprinkle with the sea salt.

4. Add Optional Ingredients (if using):

  • If you’re including them, add the crumbled feta cheese, thinly sliced red onion, and/or sliced cucumber to the bowl now.

5. Toss and Chill (Briefly):

  • Gently toss everything together to combine all the ingredients and distribute the lime juice and salt. Be careful not to mash the fruit.
  • Cover the bowl and chill in the refrigerator for about 10–15 minutes before serving. This brief chilling allows the flavors to meld slightly and ensures the salad is refreshingly cool.
