  • 2/3 cup dry white wine
  • 8 ounces angel hair pasta
  • Salt and freshly ground black pepper
  • 2 ounces soft fresh goat cheese, coarsely crumbled
  • 2 tablespoons chopped fresh Italian parsley leaves

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Meanwhile, heat 2 tablespoons of the reserved oil from the sun-dried tomato jar in a large, heavy skillet over medium heat.
  3. Add the chopped onion and sauté for about 3 minutes, until tender. Stir in the minced garlic and sauté for 1 more minute, until fragrant.
  4. Add the tomato paste and cook for 2 minutes, stirring constantly.
  5. Pour in the white wine and add the chopped sun-dried tomatoes. Simmer for about 2 minutes, until the liquid reduces by half.
  6. While the sauce simmers, add the angel hair pasta to the boiling water and cook until al dente, about 5 minutes or according to package directions.
  7. Before draining the pasta, reserve about 1/2 cup of the cooking liquid. Drain the pasta.
  8. Add the hot, drained pasta to the skillet with the tomato mixture. Toss to coat, adding some of the reserved cooking liquid a little at a time to moisten the sauce as needed.
  9. Season the pasta to taste with salt and pepper.
  10. Sprinkle the crumbled goat cheese and chopped parsley over the pasta and stir to combine.
  11. Mound the pasta into bowls and serve immediately.
