Ingredients

  • 2 cups boiling water
  • 3 hibiscus tea bags or 2 tbsp dried hibiscus flowers
  • 1/2 cup sugar
  • 1 1/2 cups pineapple juice, chilled
  • 1/4 cup fresh lime juice
  • 1/2 cup blackberries or raspberries (optional)
  • 1–2 inches fresh ginger, peeled and sliced
  • 2 cups sparkling water, lemon-lime soda, or ginger ale, chilled
  • Handful of fresh mint leaves, plus more for garnish
  • Ice cubes
  • Pineapple slices, lime wheels, or edible hibiscus flowers, for garnish

Instructions

  1. In a heatproof pitcher or saucepan, pour the 2 cups of boiling water over the hibiscus tea bags and sliced ginger. Let it steep for 8–10 minutes.
  2. Strain out the tea bags and ginger. While the tea is still warm, stir in the sugar until it has completely dissolved. Let the tea cool to room temperature.
  3. In a large pitcher or punch bowl, muddle the mint leaves with the optional berries using a muddler or the back of a spoon.
  4. Pour in the cooled hibiscus tea, the chilled pineapple juice, and the lime juice. Stir well to combine.
  5. Fill serving glasses with ice. Pour the hibiscus punch mixture into each glass.
  6. Top each glass with a splash of chilled sparkling water or lemon-lime soda.
  7. Garnish with extra mint leaves, lime wheels, or pineapple slices.
  8. Serve immediately while the drink is chilled and fizzy.
