‘Haunted’ Hibiscus Punch (An Easy Halloween Mocktail!)

Ingredients
- 2 cups boiling water

- 1–2 inches fresh ginger, peeled and sliced
- 2 cups sparkling water, lemon-lime soda, or ginger ale, chilled
- Handful of fresh mint leaves, plus more for garnish
- Ice cubes
- Pineapple slices, lime wheels, or edible hibiscus flowers, for garnish
Instructions
- In a heatproof pitcher or saucepan, pour the 2 cups of boiling water over the hibiscus tea bags and sliced ginger. Let it steep for 8–10 minutes.
- Strain out the tea bags and ginger. While the tea is still warm, stir in the sugar until it has completely dissolved. Let the tea cool to room temperature.
- In a large pitcher or punch bowl, muddle the mint leaves with the optional berries using a muddler or the back of a spoon.
- Pour in the cooled hibiscus tea, the chilled pineapple juice, and the lime juice. Stir well to combine.
- Fill serving glasses with ice. Pour the hibiscus punch mixture into each glass.
- Top each glass with a splash of chilled sparkling water or lemon-lime soda.
