  • 17 medium deglet dates, pitted
  • 3/4 cup cottage cheese (whole milk)
  • 1/4 cup maple syrup
  • 2 large eggs
  • 1 1/3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup chopped walnuts
  • 1/3 cup chocolate chips

Instructions

  1. Soak the pitted dates in a bowl of warm water while you prepare the other ingredients (about 10-15 minutes).
  2. Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper.
  3. Drain the dates well. Add the drained dates and the cottage cheese to a blender. Blend until the mixture is smooth.
  4. In a large mixing bowl, combine the blended date-cheese mixture with the maple syrup and eggs.
  5. Add the flour, baking powder, and baking soda to the bowl. Mix until just combined.
  6. Fold in the chopped walnuts and chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top. Add any extra toppings if desired.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for about 5 minutes before transferring it to a cooling rack to cool for at least another 5-10 minutes.
