Ingredients

  • 3 plum tomatoes, seeded and finely chopped

  • 1/2 cup minced fresh cilantro
  • 1 tablespoon olive oil
  • 1 to 2 serrano peppers, seeded and chopped
  • For the Burgers:
  • 3 pounds ground beef
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 12 hamburger buns, split

Instructions

  1. In a medium bowl, mix together the dill pickle relish, chopped tomatoes, white onion, red onion, cilantro, olive oil, and serrano peppers to create the salsa. Set aside.
  2. In a separate large bowl, combine the ground beef, salt, and pepper. Mix lightly but thoroughly with your hands, being careful not to overwork the meat.
  3. Shape the mixture into twelve 1/2-inch-thick patties.
  4. Grill the burgers on a preheated, covered grill over medium heat (or broil 4 inches from the heat) for 4-5 minutes on each side, or until a thermometer inserted into the center of a patty reads 160°F.
  5. Serve the burgers on hamburger buns, topped with the spicy dill salsa.
