Ingredients

  • 1 beef flank steak (1 pound)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 teaspoons olive oil, divided
  • 1 medium onion, halved and sliced
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 garlic clove, minced
  • 1/2 cup salsa
  • 1/4 cup minced fresh cilantro
  • 2 teaspoons lime juice
  • Dash of hot pepper sauce
  • 8 flour tortillas (6 inches), warmed
  • Optional toppings: additional salsa, cilantro, shredded lettuce, sour cream

Instructions

  1. Season the flank steak with salt and pepper.
  2. In a large skillet, heat 2 teaspoons of olive oil over medium-high heat. Add the steak and cook for 5-7 minutes on each side for medium doneness (or until a thermometer reads 135°F for medium-rare).
  3. Remove the steak from the pan and let it rest on a cutting board.
  4. In the same skillet, heat the remaining 2 teaspoons of oil over medium heat. Add the sliced onion and cook, stirring, for 4-5 minutes until tender.
  5. Add the jalapeno and garlic to the skillet and cook for 2 minutes longer.
  6. Stir in the salsa, cilantro, lime juice, and hot pepper sauce. Heat the mixture through.
  7. Thinly slice the rested steak across the grain.
  8. Stir the sliced steak into the onion and pepper mixture in the skillet.
  9. Serve the beef mixture in warm tortillas with your desired toppings.
