Ingredients

  • 2 pounds jumbo shrimp, peeled and deveined
  • Good olive oil
  • Kosher salt and freshly ground black pepper
  • 1 pound angel hair pasta
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • Zest and juice of 2 lemons

Instructions

  1. Preheat the oven to 400°F.
  2. On a sheet pan, toss the shrimp with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Spread them in a single layer and roast for 6 to 8 minutes, just until they’re pink and cooked through.
  3. Meanwhile, bring a large pot of boiling salted water to a boil. Add the angel hair pasta and cook for about 3 minutes, or until al dente.
  4. Before draining the pasta, reserve about 1/2 cup of the cooking liquid.
  5. In a large bowl, quickly toss the hot, drained pasta with the melted butter, 1/4 cup of olive oil, the lemon zest, lemon juice, 2 teaspoons of salt, and 1 teaspoon of pepper.
  6. Add about 1/2 cup of the reserved pasta water to the bowl and toss again to create a light sauce.
  7. Add the roasted shrimp to the pasta and toss to combine. Serve hot.
