Instructions

  1. Place the peeled and diced potatoes in a large saucepan, add the 2 tablespoons of salt, and cover with cold water.
  2. Bring the water to a boil over medium-high heat, then reduce the heat to maintain a rolling boil. Cook until the potatoes are very tender and fall apart when poked with a fork.
  3. While the potatoes are cooking, heat the half-and-half and the crushed garlic in a medium saucepan over medium heat until it is simmering. Once it simmers, remove it from the heat and set it aside.
  4. When the potatoes are tender, remove them from the heat and drain off all the water.
  5. Mash the hot potatoes with a potato masher.
  6. Pour in the warm garlic-cream mixture and add the grated Parmesan cheese. Stir to combine.
  7. Let the mashed potatoes stand for 5 minutes to allow the mixture to thicken.
  8. Season with freshly ground black pepper to taste and serve.
