No-Bake Funfetti Oreo Birthday Cake Cheesecake: An Easy Celebration!

Spread dry mix on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or microwave until it reaches 165°F (74°C). Cool completely.

For the crust:

  • 25 Golden Birthday Cake Oreos
  • 23 tbsp sprinkles
  • 1/4 cup (56g) butter, melted

For the filling:

  • 24 oz (678g) cream cheese, room temperature
  • 1/2 cup (104g) granulated sugar
  • 1 tsp vanilla extract
  • 1 cup Funfetti cake mix, HEAT-TREATED & COOLED
  • 2 tbsp milk
  • 8 oz Cool Whip (or 1.5 cups homemade stabilized whipped cream), thawed
  • 1 1/2 cups (162g) Golden Birthday Cake Oreo crumbs (from about 16 Oreos)
  • 710 Golden Birthday Cake Oreos, chopped
  • 6 tbsp sprinkles

For the whipped cream topping:

  • 3/4 cup (180ml) heavy whipping cream, cold
  • 6 tbsp (44g) powdered sugar, sifted
  • 1/2 tsp vanilla extract
  • Golden Birthday Cake Oreo crumbs, optional for garnish
  • Golden Birthday Cake Oreos, cut in half, optional for garnish

Instructions

1. Make the Oreo Crust:

  • In a food processor, pulse the 25 Golden Birthday Cake Oreos until they form fine crumbs.
  • Add 2-3 tablespoons of sprinkles and the melted butter. Pulse until the mixture is evenly moistened and resembles wet sand.
  • Press the crumb mixture firmly and evenly onto the bottom and slightly up the sides of a 9-inch springform pan.
  • Place the crust in the freezer to chill and firm up while you prepare the filling, at least 15-20 minutes.

2. Make the Funfetti Cheesecake Filling:

  • In a large bowl, using an electric mixer, beat the room temperature cream cheese on medium speed until completely smooth and free of lumps.
  • Add the granulated sugar and 1 tsp vanilla extract; beat again until smooth and combined.
  • Beat in the heat-treated and cooled Funfetti cake mix and the 2 tablespoons of milk until fully incorporated. Scrape down the sides of the bowl.
  • Gently fold in the thawed Cool Whip (or homemade whipped cream) until no streaks remain.
  • Fold in the 1 1/2 cups Oreo crumbs, the chopped Oreos, and the 6 tablespoons of sprinkles.

3. Assemble the Cheesecake:

  • Pour the Funfetti cheesecake filling into the chilled Oreo crust.
  • Smooth the top with an offset spatula or the back of a spoon.

4. Chill Until Firm:

  • Cover the cheesecake loosely with plastic wrap (try not to let it touch the surface) or place it in a cake carrier.
  • Refrigerate for at least 6-8 hours, or preferably overnight, until the cheesecake filling is completely firm and set. This is crucial for a no-bake recipe.

5. Make the Whipped Cream Topping:

  • Just before serving, or up to a few hours before, prepare the topping. In a chilled bowl, beat the cold heavy whipping cream with an electric mixer on medium-high speed until soft peaks form.
  • Gradually add the sifted powdered sugar and 1/2 tsp vanilla extract. Continue beating until stiff peaks form. Be careful not to overbeat into butter.

6. Decorate and Serve:

  • Carefully run a thin knife or offset spatula around the edge of the cheesecake to loosen it from the springform pan. Release and remove the pan sides.
  • Spread the homemade whipped cream over the top of the chilled cheesecake.
  • Garnish with additional Golden Birthday Cake Oreo crumbs and halved Oreos, if desired. Add more sprinkles if you like!
