A simple yet elegant recipe for large shrimp roasted in a flavorful garlic and herb butter. An aromatic sauce is created by briefly cooking minced garlic, fresh rosemary, and red pepper flakes in melted butter and olive oil with fresh lemon zest. The shrimp are arranged snugly in an ovenproof pan, doused in the garlic butter, and roasted with lemon slices until perfectly pink and firm. The dish is finished with a squeeze of fresh lemon juice and served hot with toasted country bread for dipping into the delicious sauce.

  • 1/4 pound (1 stick) unsalted butter
  • 2 tablespoons good olive oil
  • 2 tablespoons minced garlic (6 cloves)
  • 2 teaspoons minced fresh rosemary leaves
  • 1/4 teaspoon crushed red pepper flakes
  • Kosher salt and freshly ground black pepper
  • 2 large lemons
  • 2 pounds (8- to 10-count) shrimp, peeled with the tails on
  • 1 teaspoon coarse sea salt
  • 4 slices country bread, toasted

Instructions

  1. Preheat the oven to 400°F.
  2. In a medium (10-inch) sauté pan, melt the butter with the olive oil over low heat.
  3. Add the minced garlic, rosemary, red pepper flakes, 1 teaspoon of kosher salt, and 1/2 teaspoon of black pepper. Cook over low heat for one minute.
  4. Remove the pan from the heat and zest one of the lemons directly into the butter mixture.
  5. Arrange the shrimp snugly in a single layer in a large (12-inch) round ovenproof sauté pan or a 10×13-inch baking dish, with only the tails overlapping.
  6. Pour the prepared garlic-butter mixture over the shrimp. Sprinkle with the sea salt and another 1/2 teaspoon of black pepper.
  7. Slice the zested lemon into 1/4-inch-thick slices and tuck them among the shrimp.
  8. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through.
  9. Cut the remaining (un-zested) lemon in half and squeeze its juice over the hot shrimp.
  10. Serve immediately with toasted bread for dipping into the garlic butter sauce.

  • An ovenproof sauté pan is ideal as you can both make the sauce and roast the shrimp in the same pan, but a baking dish also works well.
